    I stepped outside to find a large cardboard box addressed to me with my newly married name. Not only hadn't I ordered anything from Williams Sonoma, I hadn't changed my name yet. Who sent this?

    I opened the box to discover a gift from my Fairy Godmother! It was Christmas! Weeks early! She sent me a new toy that I had secretly been wanting to try. And by secret, I mean literally because I knew I wanted this but I never talked told anyone about it.

    How could she know? That's where the fairy part comes in. Lots of people have Godmothers, but mine is like the one from the movies. She's been spoiling me since I was a kid, and clearly knew I would love this. She even included a recipe book to go with the funky pan so I'd know what the heck I was doing!

    For those who don't know what they are, check them out on the Williams Sonoma page here. Basically they're delightful mini filled donut pancake dumplings. Ask my closest friends and family what my favorite food is, and pancakes aren't far down the list. This was the perfect gift.

    On Monday we received just less than a foot of snow. The hubby stayed home from work, and a classic good old fashioned snow day. Time to break in that funky pan! Not to mention ONE of the THREE different pancake mixes I received for Christmas as well. (It's like people know me or something.)


    So here's what it looks like:

     This is the recipe book I used, and the pancake mix. I used the mix for my dry ingredients, and then followed along with the liquid ingredient instructions. If you'd prefer to follow it exactly from the book - here it is:
    • 2 cups all-purpose flour
    • 1 tsp. baking powder
    • 1/2 tsp. salt
    • 1 Tbs. granulated sugar
    • 4 eggs, separated
    • 2 cups milk
    • 4 Tbs. (1/2 stick) unsalted butter, melted, plus more for cooking

    To make the pancakes, in a bowl, whisk together the flour, baking powder, salt and granulated sugar. In another bowl, lightly whisk the egg yolks, then whisk in the milk and the 4 Tbs. melted butter. Whisk the egg yolk mixture into the flour mixture until well combined; the batter will be lumpy. Using an electric mixer fitted with the whisk attachment, beat the egg whites on high speed until stiff but not dry peaks form, 2 to 3 minutes. Using a rubber spatula, gently fold the whites into the batter in two additions.

    Put 1/8 tsp. melted butter in each well of a filled-pancake pan. Set over medium heat and heat until the butter begins to bubble. Pour 1 Tbs. batter into each well. 
    I used an ice cream scoop, and put about 2/3 of a scoop into each well.  But only because originally I filled the wells all the way up, and they were WAY too hard to flip once they poofed up. 

    Cook until the bottoms are golden brown and crispy, about 3 minutes. Using 2 skewers, flip the pancakes over and cook until golden and crispy, about 3 minutes more. Transfer the pancakes to a plate. Repeat with the remaining batter.

    Then they were topped with (possibly too much) confectioners sugar. They're light and fluffy, and almost exactly like a zeppole. But you eat them with a fork, so that makes them way more sophisticated.

    1. Awww, Baby girl -- I'm reading this at work, and am tearing up..... what a surprise!!! I love you so much and am thrilled that you like the pan!!! (It's my favorite pan, too!) You must try putting a filling in...we'll chat! ;-)

      2. uh oh i see a new toy i want to get. like our kitchen isn't cluttered enough already. Steph will expect them at our next gathering, bluberry will suit me just fine thank you! love the story and the players god bless!
